Method:
Skin the pineapple and cut lengthwise
into four. Cut away the hard core from each piece and cut each piece
lengthwise again. Cut the strips into small cubes. Heat up oil in pan
and fry the onions until golden brown. Put in the garlic, cinnamon,
cloves, coriander and chili paste. Stir well then add the pineapple
cubes. Stir in the salt, coconut milk and brown sugar. Turn the
ingredients over a few times and simmer gently for 5 minutes over
moderate heat. Serve.
