Pineapple In Coconut Milk Curry Recipe

Ingredients:

1 slightly under ripe pineapple

1 tbsp groundnut oil

1 large onion (chopped)

1 clove garlic (chopped)

1 cinnamon stick

3 cloves

2 tsp coriander (ground)

2 tsp chili paste

1 tsp salt

1 cup thick coconut milk

2 tsp soft brown sugar

Method:

Skin the pineapple and cut lengthwise into four. Cut away the hard core from each piece and cut each piece lengthwise again. Cut the strips into small cubes. Heat up oil in pan and fry the onions until golden brown. Put in the garlic, cinnamon, cloves, coriander and chili paste. Stir well then add the pineapple cubes. Stir in the salt, coconut milk and brown sugar. Turn the ingredients over a few times and simmer gently for 5 minutes over moderate heat. Serve.
