Fried Chili Spinach Recipe

Ingredients:

1.5lb spinach

2 tbsp groundnut oil

1 large onion (shredded)

1 clove garlic clove (finely chopped)

2 tsp chili paste

1 tsp galangal

1.5 cups hot bouillon (stock)

2 tsp Indonesian sweet soy sauce (thick soy sauce)

Method:

Pick over the spinach to remove thick stalks. Wash and drain. Heat up oil in pan and stir fry the onions until golden. Add in the garlic and stir well. Add the chili paste and spinach. Stir in the galangal and the bouillon and bring to the boil. Remove from heat and add soy sauce to taste. Transfer to serving dish and serve.
