Method:
Put 1/2 tsp of sugar and 1/2 tsp of the
oil with 2 cups of water and boil the egg plant in it. When it is
done, remove egg plant from water and arrange on a plate. Sprinkle
with the basil leaves, chili slices and put aside.
Heat up oil in pan to stir fry the
mushrooms and fermented soy beans. Season with the soy sauce and
sugar. Stir and mix thoroughly. When done dip out over the egg plant.
