Method:
Cut abalone into thin slices. Cut the
vegetables into 3" length. Cook mushrooms and vegetables separately in
water for 2 minutes. Remove. Place mushrooms and vegetables in cold
water to cool; drain. Heat pan with oil. Stir-fry vegetables with salt
for 15 seconds over high heat. Remove and arrange around edge of
serving plate. Reheat pan with oil, stir-fry green onion and ginger
until fragrant. Add mushrooms and stir-fry briefly. Add wine, oyster,
soy sauce, sugar and sesame oil. Let mixture boil and add cornstarch
to thicken. Add abalone. Mix well and serve.
