Method:
Stir-fry grated coconut over low heat
until light brown. Set aside. Heat oil in a pan and fry pounded
ingredients until fragrant. Add in curry powder and fry for a minute.
Add in 1 cup of coconut milk and simmer for a minute. Add in beef and
grated coconut. Stir well and add in the rest of the coconut milk and
salt. Simmer until gravy thicken. Serve hot.
