Spicy And Sour Shrimp Soup Recipe

Ingredients:

3.5 cups chicken stock

3 stalks lemon grass cut into 1/4 inch length pieces

5 kefir lime leaves

15 raw medium size shrimps (shelled but leave the head intact)

5 oz mushrooms (halved)

5 fresh small green chilies

1/2 cup coriander leaves and stems (sliced)

3 tbsp lime juice

1/2 tbsp fish sauce

Method:

Pour the stock into a pan and bring to the boil. Put in the lemon grass and lime leaves then the shrimps and mushrooms. After about 8 minutes or when the shrimps are cooked remove the pan from heat and put in the rest of the ingredients. Let it stand for 5 minutes. Taste the soup. The soup should be spicy sour and a little salty. Add fish sauce or lime juice if required or break up the chilies to make the soup more pungent. Serve.
