1.5 lb cod fillets, cut into a few thick
pieces
2 cups water
1.5 tbsp oil
1 onion, chopped
2 tbsp scallions, chopped
2 tsp garlic, crushed
1 tsp ginger root, crushed
3 tsp chili powder
Salt to taste
1 cup zucchini, thinly sliced
1 green pepper, finely sliced

Method:
Put the cod in a pan with the water.
Bring to a boil. Then lower the heat and simmer for 5 minutes. Remove
from the heat and set aside. Heat oil in a pan. Add onion, scallions,
garlic, ginger and chili powder. Stir-fry for 1 minute. Then add in
zucchini and green pepper. Stir-fry for another minute. Add to the
fish and simmer for 5 minutes. Add salt to taste. Serve hot.
