Chicken And Galangal Creamy Soup Recipe

Ingredients:

6 cups thin coconut milk

30g shallots finely chopped

20g galangal thinly sliced

2 stalks lemon grass cut into 1 inch pieces

8 fresh small red chilies

3 kefir lime leaves shredded into small pieces

salt to taste

350g boneless and skinned chicken breasts cut into 1/4 inch thick slices

200g fresh mushrooms

2 tbsp lemon juice

1/2 tbsp fish sauce

3 tbsp coriander leaves and stems cut into 1/2 inch pieces

Method:

Pour coconut milk into [an and bring to a boil. Put in the shallots, galangal, lemon grass, chilies, lime leaves and salt. Bring to the boil again. Put in the mushrooms and bring to boil for 2 minutes. Remove from heat and add in lemon juice, fish sauce and coriander. Serve in bowls together with lime quarters and rice.
