Method:
Mix vinegar, salt and sugar in
proportions according to preferred taste. Wash mixing tub well. Dry
with towel. Put cooked rice into mixing tub and spread evenly over the
bottom of mixing tub. Sprinkle the vinegar, salt and sugar mixture
generously over the rice. You may not use all of the mixture. With a
large wooden spoon, mix rice with a slicing motion. While mixing, use
a fan to puff away the extra liquid. Keep sushi in the wooden covered
with a damp cloth.
