2 cups rice
4 cups of thick coconut milk
5 screw pine leaves
salt to taste
4 cm piece ginger (sliced)
5 shallots (sliced)
Method:
Clean the rice and drain. cook the rice with the coconut milk and screw pine leaves. Add in salt, sliced ginger and shallots. Serve rice with hard boiled eggs, cucumber or fried anchovies and chili paste.
