Stir Fried Chicken With Balsam Leaves Recipe

Ingredients:

2 cups boneless chicken meat (sliced or Chopped)

1 cup straw mushrooms (halved)

1/2 cup sliced garlic (crisp fried)

1/2 shallots (crisp fried)

1/2 ripe tomatoes (seeded, blanched, and peeled, then chopped roughly)

1 cup balsam leaves (deep fried until crisp)

10 red chilies (roasted)

1 tbsp shrimp paste (roasted)

salt to taste

few slices of ginger

Method:

Pound the chilies, ginger, shrimp paste and salt together. Heat up a little oil to fry the paste. Stir well until fragrant. Add the chicken meat. Keep stirring until well mixed. Mix in the mushrooms and chopped tomatoes. Add most of the fried garlic, shallots and fried balsam leaves. Sprinkle the rest of the fried garlic, shallots and balsam leaves on top before serving.
