Fragrant Crisp Duck Recipe

Ingredients:

1 young duck about 3 lb

1 dessertspoon of five spice powder or mixed spice powder

1 tbsp of light soy sauce

salt to taste

1 dessertspoon of brandy or 2tbsp of rice wine

sugar to taste

Seasoning Ingredients:

4 oz of cornstarch

1 egg

1 lb cooking oil for deep frying

1 dessertspoon of dark soy sauce.

Method:

Clean duck. Open it by cutting down the back. Smear it with dark soy sauce. Fry in hot deep oil until brown. Stew it in a bowl of water. Remove the bones, keeping the skin intact. Season the duck with mixed spice powder or five spice powder, wine light soy sauce and sugar for 30 minutes. Make a mixture of tapioca flour or corn flour, coat with beaten egg. Fry again in deep oil until light brown. Cut into pieces. Serve with gravy in which duck has been stewed (optional). It can be eaten dry.
