Chicken Satay Recipe

Ingredients:

1 boneless chicken

16 shallots

5 cloves garlic

3 cm fresh turmeric

4 tbsp honey

1 cup cooking oil

2 tbsp chili paste

 

Sauce A

5 stalks lemon grass

4 cm ginger

3 cloves garlic

9 shallots

 

Sauce B

400g ground nuts- grilled and pounded

2 tbsp tamarind mix with 3.5 cups water - extract juice

4 tbsp brown sugar

1 tbsp sugar

1 tsp salt

2.5 cups water

 

Basting Sauce

4 tbsp honey mix with

4 tbsp cooking oil

 

Method:

Cut chicken into 3cm x 5cm pieces. Pound together shallots, garlic and fresh turmeric. Season chicken with the pounded ingredients and honey. Skew chicken with satay sticks and grill over charcoal fire. Keep basting with basting sauce till satay is fragrant and cooked.

 

To make sauce: Heat oil in a pan. Put in chili paste and sauce A. Fry until fragrant. Add sauce B and simmer for 10 minutes.
