Chicken In Yam Basket Recipe

Ingredients: |
1/2 lb of yams, sliced thinly
8 oz water chestnuts
6 oz chicken meat, cubes
1/2 cup mixed beans
Cooking oil for frying
2 oz cashew nuts, roasted
1 tsp onions, chopped
1 tsp sesame oil
Salt and pepper to taste
1/4 lb button mushrooms, sliced thinly
1 tsp tapioca flour

Method:
Season the yam strips with tapioca
flour, salt and pepper. Spread 3 or 4 tbsp of yam strips on to a big
sieve. Use a smaller sieve and press the yam strips together. Fry in
hot oil for 15 minutes, so as to form a nest. Heat 1 tbsp cooking oil
in frying pan. Add onion. Fry until soft. Add chicken, salt, pepper
and sesame oil. Then put in water chestnuts, mixed beans and button
mushrooms. Fry for 3 minutes. Place the chicken mixture into the yam
nests. Garnish with cashew nuts. Serve hot.
