Method:
Clean and dry the chicken well. Rub them
with a bit of salt and stand for 30 minutes. Heat oil in a pan and fry
the chicken until golden brown. Remove the chicken and set aside. Heat
1 tbsp oil in a pan. Fry the pounded ingredients until fragrant. Add
in sugar, lemon juice, coconut milk and salt to taste. Bring to a
boil, stirring all the time. Put the chicken into the sauce and simmer
until tender. Turn the chicken pieces over regularly. The sauce should
reduce by half during cooking. Garnish with fried onion. Serve.
