Method:
Pound the chilies, onions, lemon grass,
garlic, shrimp paste and salt together until fine. Heat up oil in pan
and put in the chili mixture, pork and tomatoes. Cook until thick
(about 15 minutes). Then add water and cook for another 10 minutes or
until thickens. Season to taste with lemon juice, fish sauce and
sugar. Garnish with coriander leaves. Serve.
