Beef With Red Curry Paste Recipe

Ingredients:

1.5 kg sliced beef

1.5 cups thick coconut milk

2 cups second coconut milk

12 big dried chilies, cut and soaked

3 slices galangal

1 stalk lemon grass, sliced

1 tsp rinds of kaffir lime, sliced

12 coriander roots, chopped

6 cloves garlic

1 shallot

12 peppercorns

1 tsp shrimp paste

3 tbsp fish sauce

1 tbsp sugar

1 cup roasted crushed nuts

10 red chilies, sliced

6 kaffir lime leaves, shredded

1 cup basil leaves

 

Method:

Grind the dried chilies, galangal, lemon grass, lime rinds, coriander roots and garlic. Add shallot, peppercorns and shrimp paste. Cook sliced beef in second coconut milk and simmer until tender and the gravy reduced. Bring one cup of thick coconut milk to boil and keep stirring. Add the ground ingredients and stir until mixture thicken. Add cooked beef and crushed nuts. Stir until well mixed. Add basil leaves, fish sauce and sugar. Then add sliced chilies, shredded lime leaves and mix well. Put on top a little thick coconut milk before serving.
