Almond Rice Pudding Recipe

Ingredients: Serves 4 to 6

2.5 pints milk

3/4 cup rice (washed)

1.5 cup sugar

20 almonds (blanched, skinned and thinly sliced)

2 tsp rose essence

1/2 cup raisins

7 cardamoms (skin removed and seeds crushed)

Method:

Pour the milk into an aluminum pan and bring to boil. Add the washed rice and cook using medium heat for an hour, constantly stirring to prevent mixture from sticking to the pan. Put in sugar, raisins, almonds and crushed cardamom. cook over low heat for 20 minutes. By now the rice should be well cook and blended into the milk. Add the rose essence. Serve hot or chilled.
