Method:
Marinate mixed fruits and raisins in rum
for 24 hours. Lightly beat butter and icing sugar together till
fluffy. Remove and set aside. Beat eggs and sugar together till
fluffy. Pour into butter mixture and mix well by hand. Add plain flour
and mixed fruits and raisins a little at a time, stirring to mix well.
Pour cake mixture into prepared baking tin (greased and lined). Bake
at 170 degrees Celsius for 45 to 60 minutes.
