Method:
Beat butter and sugar until light and
creamy. Add grated orange rind and mix well. Stir in plain flour and
knead into a dough. Roll the dough thinly to make 1 cm thick. Cut into
3 cm X 5 cm size pastry. Sprinkle with caster sugar and prick with a
fork to make a pattern on the pastry. Bake in oven at 180 degrees
Celsius for 20 minutes until golden. Let it cool and serve.
