Beat butter, essence, sugar and egg in
bowl with electric mixer until just combined. Stir in sifted flour,
chopped banana chips and nuts.
Shape 2 level teaspoons of mixture into
a ball, place onto greased oven tray, top with an extra banana chips.
Repeat with remaining mixture and banana chips, leaving about 5 cm
between cookies. Bake in moderately hot oven for about 12 minutes or
until lightly browned. Cool cookies on trays.
