Method:
Beat butter, essence, sugar and egg in a
small bowl until light and fluffy. Stir in sifted flour and soda,
prunes, apricots and chocolate bits. Roll 1 level teaspoon of mixture
into a ball and place onto lightly greased oven tray. Press lightly
with fork dipped in flour. Repeat with remaining mixture, allowing
about 2 cm between cookies. Bake in moderate oven for about 15 minutes
or until lightly browned. Cool on wire rack. Sprinkle lightly with
sifted icing sugar.
