Almond And Redcurrant Recipe

Ingredients: |
60g butter
1/4 tsp almond essence
1/4 cup castor sugar
1/4 cup ground almonds
1/3 cup plain flour
1 egg white
1/3 cup redcurrant jelly
icing sugar |
Method:

Beat butter, essence and sugar in a bowl
until light and fluffy, stir in almonds and sifted flour. Beat egg
white until soft peaks form, fold into mixture in 2 batches.

Drop level teaspoons of mixture about 5
cm apart on greased oven trays. Bake in moderate oven for about 6
minutes or until lightly browned. Lift onto wire racks to cool.
Sandwich biscuits with a little warmed jelly. Dust with sifted icing
sugar.
