China is one of the largest countries in
the world with the largest population of 1.3 billion. Bearing this in
mind and the fact that the Chinese have been leaving their country and
settling down in all parts of the world, it becomes clear that the
extent and influence of Chinese cuisine is world wide. Owing to its
size, several climates can be distinguished there. In some regions it
is warm through the year, while in others the summers are short and
hot and the winters are long and cold. These climatic differences
create favorite conditions for agriculture and livestock farming.
China is also rich in natural water resources which yield a large
quantity of fish and shellfish. Many lakes and ponds support fish
nurseries and duck breeding farms. Chinese traders travel abroad and
become acquainted with new spices and brought them back to China. This
was one of the factors that made it possible for Chinese cuisine to
become one of the most important and famous cuisines in the world.
