Holiday Cooking 101: Making Holiday Cookies

How many times have you dreaded going into the kitchen to make breakfast, lunch, or dinner? You might need a new perspective. Cooking can be enjoyable and relaxing if you try to see it in another way. Here are a few cooking tips that are sure to get your taste buds tingling and entice your inner chef to come out.

Always bake your crusts a little longer than is absolutely necessary. Go past the usual pale tan color and take them to a caramel gold. The darker color results when the sugar from the crust has started to caramelize and will have a much sweeter and crisper flavor.

Keep spices in a dark and cool place. When spices are exposed to light and heat, they lose their flavor and it reduces their storage life. If you store your spices in dark place with relatively low temperatures like a pantry, the spices will retain their taste and take longer to spoil. These fresh spices will help add flavor to your meals, making them tastier!

Do you feel bad for getting rid of fruits that are moldy? Have you ever been tempted to cut the rotten bits out of a piece of fruit and eat the rest? Sadly, there is really no safe method for using fruit that is partially rotten. Get rid of anything that has mold on it. Mold goes deeper than the eye can see and could be very harmful.

Fresh Basil

Do you want to cook with fresh basil? Put some fresh basil into a glass. Add water to cover the stems. Store it on the counter of your kitchen; it will stay fresh for weeks. Most often times, basil will actually take root in water. Trim your plant on occasion and you will encourage future growth. This means you will have fresh basil in your kitchen for a long time to come!

This type of seasoning can be added to all types of foods other than meat. You can use your favorite spices and seasonings to enhance the naturally delicious flavor of scrambled eggs and roasted pumpkin seeds. Everyone at the table will be asking for your recipe!

Make big portions when preparing stock. Fill a large pot of stock and freeze it for later. There are a variety of recipes that call for chicken stock, so having it on hand is always a good idea. Just cool your stock and freeze it in heavyweight Ziploc freezer bags.
