Method:
Wash, trim and season the fish with
salt. Wash, skin and shred the cucumber for garnishing. Wash, shred
the chili and spring onions and pluck the coriander leaves for
garnishing. Chop onion and garlic. Put the tomato sauce, tapioca
flour, a pinch of salt and sugar and 3 tbsp of water into a bowl and
mix together. Heat up 5 tbsp of oil and fry the fish till brown on
both sides. Put the fish on serving dish. Pour out all the oil from
the pan. Brown the onions and garlic in the oily pan. Add the tomato
sauce mixture and cook until it thickens. Add water if the sauce
becomes too thick. Season the sauce and pour it over the fried fish.
Garnish the fish with shredded vegetables and coriander leaves. Sliced
tomatoes and cucumber may be used for garnishing around fish.
