Fried Fish In Peanut Sauce Recipe

Ingredients:

1.5lb cod fillet

4 tbsp lime or lemon juice

1/2 tsp salt

1 tbsp Indonesian salty soy sauce (thin soy sauce)

1 tbsp Indonesian sweet soy sauce (thick soy sauce)

8 tbsp thick coconut milk

3 tbsp peanut butter

7 tbsp groundnut oil

1 large onion (chopped)

freshly ground black pepper

1 tbsp finely chopped coriander leaves

1 red chili seeded and cut into thin strips

Method:

Cut the fish into 4 or 5 equal portions. Rinse the fish and dry with kitchen paper. Mix the salt with 2 tbsp lemon or lime juice. Stir until salt dissolves. Coat the pieces of fish with the mixture all over. Leave aside for 15 minutes. Mix the soy sauces, 2 tbsp lemon or lime juice, coconut milk and peanut butter into a small sauce pan and bring to the boil. Stir constantly until sauce thickens. If the sauce is too thick add 1 or 2 more tbsp of hot water. Heat up oil in pan and fry the onion until fragrant. Dry the fish again and sprinkle with pepper. Fry in the hot oil until golden brown on all sides. Remove as much oil as possible and pour in the hot sauce. Spoon the sauce over the fish and simmer for 3 minutes. Dish up the fish onto serving plates and pour the remaining sauce over the fish. Sprinkle coriander leaves and strips of chili over the fish. Serve.
