Soy Sauce Braised
Chicken Recipe

Ingredients: |
1.5kg whole chicken
2 big onions
1 clove garlic
100g spring onions
80g soy sauce
40g dark (thick) soy sauce
1 stick cinnamon
1 tbsp star anise
1 tbsp cumin seeds
1 tbsp peppercorn
3 cardamom
20g sugar
5cm ginger
1 tbsp sesame oil
2 liters chicken stock
100g corn flour
2 tbsp cooking oil |
Method:

Mix all the ingredients, except the
chicken and corn flour into a cooking pot and bring it to boil.

Lower chicken into the mixture and heat
over slow fire for 20 minutes.

Remove the chicken from the mixture and
place it on a serving dish.

Pour in corn flour to thicken stock
mixture.

Simmer mixture for 2 minutes and pour it
over chicken dish. Garnish with coriander leaves and serve.
