Dry the chicken with kitchen paper and
cut into 1/2 inch cubes. Heat up oil in pan and stir fry the onion
until transparent. Add in garlic and stir well. Put in the pieces of
chicken and stir fry cooked. Stir in the chili paste, salt, galangal,
lemon juice and 3 tbsp water. Simmer for 3 to 4 minutes. Dish up and
serve.
