Sugared Lemon Cookies Recipe

Ingredients: |
100g butter, softened
110g caster sugar
grated rind of 1 lemon
1 egg, beaten
4 tbsp lemon juice
330g plain flour
1 tsp baking powder
1 tbsp milk
icing sugar for dusting |
Method:

Cream together the butter, sugar and
lemon rind until pale and fluffy.

Add the beaten egg and lemon juice a
little at a time. Beat well.

Sieve the flour and baking powder into
the mixture and blend together. Add the milk to form a dough.

Turn the dough out on to a lightly
floured surface. Divide the dough into 50 even sized pieces.

Roll each piece into a sausage shape
with hands. Form any sharp you like.

Place on the grease baking trays and
bake in a preheated oven for 15 minutes or lightly brown.

Leave to cool on a wire rack. Dust with
icing sugar before serve.
