Spiced Rum Cookies Recipe

Ingredients: |
170g unsalted butter
160g brown sugar, firmly packed
220g plain flour
pinch of salt
1/2 tsp bicarbonate of soda
1 tsp ground cinnamon
1/4 tsp ground coriander
1/2 tsp ground nutmeg
1/4 tsp ground cloves
2 tbsp dark rum |
Method:

Whisk the butter and sugar until light
and fluffy.

Sieve the flour, salt, bicarbonate of
soda, cinnamon, coriander, nutmeg and cloves into the creamed mixture.

Stir in the dark rum.

Using a teaspoon, put small amounts of
the mixture on to the baking trays. Placing them 7 cm apart . Flatten
each one slightly with the back of a spoon.

Bake in a preheated oven for 12 minutes
or until lightly brown.

Leave the cookies to cool on wire racks.
