200g plain flour
2 teaspoons baking powder
100g butter cut into small pieces
70g sugar
90g sultanas
2 tablespoons glace cherries (finely chopped)
1 egg (beaten)
2 tablespoons milk
Method:
Lightly grease a baking tray.
Sieve the flour and baking powder into a bowl. Rub in the butter with your fingers until the mixture resembles breadcrumbs.
Stir in the sugar, sultanas and glace cherries.
Add the beaten egg and the milk to the mixture. Mix to for a soft dough.
Spoon 8 moulds of the mixture on to the baking tray, allowing enough space for spreading during baking.
Bake in a preheated oven at 200 degrees Celsius for about 20 minutes or until firm to the touch when pressed with a finger.
Remove from the baking and transfer to a wire rack and allow to cool.
