Sift together A ingredients and stir
plain cereal and 1/4 cup of desiccated coconut. Cream Margarine and
honey until light and creamy. Beat in egg. Fold in dry ingredients and
mix well.
Roll dough 5mm thick on floured surface.
Cut with your desired cookies cutter. Place on lightly greased sheet,
leaving 4cm between each one.
Bake in preheated 180 degrees Celsius
oven for 10 minutes or until golden brown. Remove to wire rack, cool
completely.
In double boiler, melt chocolate and
cooking oil over low heat, stir until mixture is melted and smooth.
Dip half of each cookies into melted chocolate, shake off excess
chocolate. Sprinkle with remaining desiccated coconut.
Store in fridge and in airtight
container at all times.
