Crispy Peanut Butter
Cookies Recipe

Ingredients: |
125g butter, softened
140g chunky peanut butter
200g caster sugar
1 egg, lightly beaten
150g plain flour
1/2 tsp baking powder
pinch of salt
70g unsalted natural peanuts, chopped |
Method:

Beat the butter and peanut butter in a
mixing bowl.

Gradually add the sugar and beat well.

Add the beaten egg to the mixture, a
little at a time, until well combined.

Sieve the flour, baking powder and salt
into the mixture.

Add the peanuts to form a soft dough.
Wrap and leave to chill for about 30 minutes.

Form the dough into 20 balls and place
them 5 cm apart on the grease baking trays. Flatten them slightly with
your hand.

Bake in a preheated oven for 15 minutes
or until lightly brown. Cool the cookies on a wire rack.
